If you make it from scratch, no lard. Pretty easy too. I'll check with my ma, she always has a cake of homemade cornbread going.

 

I don't know about lard, but I've seen cornbread recipes with milk, so you might keep an eye on the label for that.

You bought the Jiffy box of cornbread mix.....I'm assuming. Trader JOe's boxed corn bread mix doesn't contain lard. I think Jiffy is about the only one I know of that does......unless you bought a different brand. Make it from scratch, it's really easy.

Just buy a canister of cornmeal and follow the directions for cornbread. Jiffy does contain lard, as I discovered last Thanksgiving and made biscuits instead. Since then, I've just bought the canister and its easy.

 

Yeah, pretty much all of the Jiffy mixes have lard in them. Betty Crocker has lard-free mixes, but I think they have eggs or dairy in them. Trader Joe's is another that is great. Your best bet is to make it from scratch, though. It's not difficult--all the mixes do is combine all the dry ingredients for you.

A lot of recipes for cornbread call for lard or bacon grease.

For instance at Cracker Barrel their corn bread has bacon grease. And ever vegetable they make (except a plain baked potato) has butter or animal fat used in the cooking of it.

If you are South of the Mason Dixon line I would always assume (unless you know different) that the corn bread has some form of animal product in it. From bacon grease or lard to butter, eggs, buttermilk or plain milk.

 

I've found that I can smell it on the cornbread in most restaurants. So I avoid it.

Yeah. It was Jiffy.

 

Jiffy puts lard in everything. Including blueberry muffins.

 

OT for cornbread, but I hate that most gravy mixes have beef in them. Even mushroom gravy! Can't they leave *one* alone?

Campbells makes what appears to be a vegan mushroom gravy. It's in a can. Just heat and serve. I bought some the other day. I haven't tried it yet, but I'm planning to the next time I make biscuits or mashed potatoes.

EnerG egg replacer works really well. Though I don't think I'd try making a brioche with it, it works very well in most baked goods calling for whole eggs or egg whites.
