I never know if I'm supposed to toss the skins or not. When I mash them up for mock tuna, there are always a ton of skins. What do you do?

Wow, I cannot imagine skinning all those chick peas! That is some real patience!! I think when I've gotten them from a can, they seemed pretty much skinned already. I only notice the skins when I cook them from dry - I might take a few off if they're already hanging, but for the most part I leave them on. Don't bother me

I leave them all the time.

My favorite is to mash them with a potato masher when I am making garbanzo burgers, I finish the larger pieces with a fork. Then I combine diced ******* potatoes, onions, green peppers and jalapenos (or your favorite veggies) that have been sauteed in extra virgin olive oil, form into patties.

If I am really being naughty and could use the calories that day, instead of using a non stick spray like pam, I will use peanut oil and crisp both sides of the burger in a pan. Though I call them "burgers" I don't serve them on bread lol

When you mash them, the skins typically come off in clumps. Dang, wish I had taken a picture. You can grab 5-8 at once. I never remove the skins if I'm eating them whole, but mashed up they just separate. I never know if I should toss them or just mix them back in.

hmmm. sounds weird. i'd mix them back in if i was you. no point throwing out food really- they add a bit of texture and fibre and stuff, and you could pretend they're tuna skin?

no disrespect to your culinary skills at all, but thats not exactly an appetising image to unexpectedly find infront of me on a rather large scale- because while i'm sure it is very tasty, it looks like barf on a plate- as mashed up chickpeas and other assorted gloopy things are prone to looking.
