Granny just sent me this recipe, and just in time. I'm overrun with zucchini!

4 cups of zucchini, cubbed
2 onions, chopped
1/4 cup parsley
2 cups veggie broth

Steam zucchini and onion until tender
put everything in a blender and blend smooth

Served chilled for a cooling summer meal.

Note. I didn't add the full 2 cups of broth, I thought it would be too thin.
I added hot sauce when I fixed my bowl. YUM!

hmmm....and how did that taste? I too am overrun with zucchini!

It tastes great. I tried it before the parsley (I forgot to put it in) and it was really good. I added the parsley and it was still good, but I think I prefer it without or with a reduced amount of parsley. I only added a pinch or so of salt, but it really didn't need it.

I think I'm going to try it cold and hot....thanks for the idea....it'll probably realistically become a veg soup though

no don't put it in your steamer, just put a little water in a fry pan with the zucchini and onion with the cover on, and it'll steam that way. Just a little water, not much at all, but enough so that it doens't immediately go dry either.
