Here's a delicious recipe from the cookbook "Cooking With Peta". It is soooooo good and really easy!!<br><br><br><br>
CHIPOTLE SPLIT PEA SOUP<br><br><br><br>
Chipotle is a smoked jalapeno pepper that adds a smoky flavor without the ham hock.<br><br><br><br>
Ingredients:<br><br><br><br>
2 cups dried split peas<br><br>
8 cups water<br><br>
1 medium onion, chopped<br><br>
2 cloves garlic, minced<br><br>
2 carrots, sliced diagonally then chopped<br><br>
2 stalks celery, sliced diagonally then chopped<br><br>
1/2 cup chopped parsley<br><br>
1/2 chipotle, finely cut (1 tsp) or more, to taste (or use another type of pepper, if desired)<br><br>
1 Tbsp soy sauce<br><br>
Sea salt and fresh ground pepper, to taste<br><br><br><br>
Directions:<br><br><br><br>
Sort and rinse the split peas then put into a large pot. Add the water. Bring to a boil then reduce heat to a simmer (medium or medium-low heat). Simmer the peas for about 45 minutes to an hour, until the peas are soft. While the peas are simmering, chop and prepare the other ingredients. Add the remaining ingredients and continue cooking until the vegetables are tender, adding more water as needed.<br><br><br><br>
Yields about 10 cups.<br><br><br><br>
