I know some of us are trying to find more ways to get flax in our diets. I made these pancakes for my family last weekend and the were a hit. Very easy too.<br><br><br><br>
Pancakes with flax<br><br><br><br>
In a large bowl mix together:<br><br>
2 1/2 cups whole wheat flour, unbleached white flour, or a combination<br><br>
1/4 cup ground flax meal<br><br>
4 tsp. baking powder<br><br>
2 tsp. baking soda<br><br>
1 tsp. salt<br><br><br><br>
When the dry ingredients are well combined, stir in:<br><br>
3 cups fruit juice (apple, orange, white grape, etc.)<br><br><br><br>
Mix briefly-lumps are okay. Cook 'em up on a skillet! They were yummy!

Awhile ago VRG did a flax story and included things like flax cookies. I could try to find the issue if you like and post some recipes.<br><br>
I personally like flax in smoothies! <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)">

Muffcake, I'd to have some of those recipes. Flax smoothie?Epski, Muffcake that sounds interesting.<br><br>

I just throw in the following:<br><br><br><br>
about a cup of apple juice<br><br>
1/2 banana<br><br>
5 or 6 large frozen strawberries<br><br>
2 tbsp of veg*n protein powder<br><br>
1 tbsp of milled flaxseed<br><br><br><br>
If you like your smoothies thinner than I do, you can add a splash or two of soymilk.<br><br><br><br>
Simple, but delicious.

Same thing that epski does but I use vegan soy powder, blueberries and, a bit of shelled sunflower seeds. I also think that it helps that the banana be frozen.

With the frozen strawberries (or blueberries, if you use those), the smoothie is pretty thick already. I haven't tried freezing the banana since they already help thicken the smoothie along with the frozen fruit, but if you like your smoothie especially smooth, you should consider it. Perhaps if you added an additional juice, like pineapple, you'd need another frozen item to balance out the smoothie.<br><br><br><br>
It's fun to experiment once you get the hang of one or two smoothies.
