My ideal restaurant would be right next door to my house, they deliver to my workplace and anywhere else I happen to be, and they're such philanthropists they charge me less that it would cost to buy all my food at grocery stores, farmers' markets and bulk food stores. But, their business is completely salient, and their workers are paid a living wage. And they're open 24/7. (This is my imagination, remember.)
All manner of vegan food would be on the menu, and it's so good I'd never notice the cheese isn't dairy and the guacamole doesn't have dairy sour cream.
Extra emphasis would be put on south Asian and South American cuisines. Plus Ethiopian, American comfort foods, Italian and Spanish. Delivery food arrives within 15 minutes of being ordered, and when I go in for a relaxing meal with a good friend, they take their time. They just know these things. Servers come at just the right breaks in the conversation, and all of them are excellent conversationalists themselves.
On weekends, they should have a dance floor and all the music I like, with none that I don't. All kinds of people should show up and dance, but not so many there's no room for me to get into the action. They should definitely not have a bunch of seedy drunks stumbling around.
Oh, given that they are right next to my house, I would want them to be quiet when I am trying to sleep. But they're open 24/7, so I don't know how that would work exactly. Oh well, it works in my fantasy.
