Much better luck with the loaded nachos & the nacho cheese sauce even tho it called for yellow miso & all I had was white, still turned out delish!
Just got thru making the apple crisp muffins - yum! It called for 1-1/2 c whole wheat pastry flour but I only had 1/2c left & had to use regular whole wheat flour for the rest but they still turned out great! Will definitely be making these again!

I'm so glad you mentioned the miso! I was really disappointed to see so many recipes calling for that ingredient. I can order red and white miso online but couldn't find yellow anywhere! I was wondering what I could sub it for. I will try the white now that you said it turned out fine.

I'll have to look for it......ok, she uses the word meat as in "meat substitutes (also called meat analogues, meat replacements, or mock meats, See Vegan Meats in glossery), and in the definition of a typical omelet., and the phrase vegetarian meats later in the same paragraph. Then I found a description of "meaty burger" and a list of ingredients in a non-veg chimichanga.....
IDK....I don't take issue with it. She's not glorifying the word or using it excessively. She's writing the cookbook as if it were being used by a brand new veg person. I can totally see the why's behind comparing omni foods and how the veg foods are different.
I dont think she is glorifying it, its just that I dont like seeing those sorts of words myself. Probably I am weird, I dont know. But it is a great cookbook apart from this.
funny how some things can bother one person, and not another....I wouldn't have even taken a second look at those words, and at 1 am, grab the cookbook to see what you were talking about, because I didn't remember reading it. Oh well!
So I"m gonna make some recipes from this book on Sunday night, Monday, and Tuesday. I'm hoping to make the omelet, African kale and yam soup, spicy greens, and the chocolate chip cookies. I'm gonna experiment with the cookies and try them gluten free and see how they come out.

you're going to love the soup! Just know ahead of time, that the choc chip cookies are more cake like, becuase they're made of applesauce. These are no way like Toll House cookies, but at least they're fat free! They're very soft
Made them. They're pretty good. I'll probably make them again! I don't think I cooked them long enough lol. I'm making the soup tomorrow night and will tell you how it turns out.
I don't think I baked mine long enough either. Next time will be on a Silpat too. they all scrunched up using a spatula to move them off the baking stones. Still tasted good though!
I just made the baked falafel for my dinner at wk. They taste really good too!
I haven't had much luck with Happy Herbivore, I hated the black bean brownies, but I've eyed that apple crisp recipe, I've just been very hesitant to try anything else from that book since the first four things I tried didn't turn out well. But I'll feel better trying them knowing other posters have had luck.
The cinnamon rolls, which were very hard, but I think it's because the recipe didn't say to let them raise, which all yeast breads should. And also the Mexican cabbage, which I thought was kind of watery and bland, and the black bean wraps, which I thought were way too spicy.
hmmm....I found a perfect cinnamon roll recipe on line so probably wouldn't make a different recipe, and you're right, it has to raise. havne't tried the black bean wraps or cabbage.
