White Chili<br><br>

Suitable for a: vegan diet<br><br><br><br><br><br>
Ingredients:<br><br>
------------------------------------------------------<br><br><br><br>
1 package Morningstar Farms Meal Starters Chick'n Strips, thawed<br><br>
1 Tablespoon vegetable oil<br><br>
1 large onion, chopped<br><br>
1/2 jalepeno pepper (or more if you like it spicy), seeded and chopped (you should wear gloves)<br><br>
1 yellow or orange bell pepper<br><br>
2 stalks of celery, chopped<br><br>
1 small can of chopped green chilies<br><br>
2 large cloves of garlic<br><br>
1 Tablespoon cumin<br><br>
1 teaspoon coriander<br><br>
2 15 ounce cans cannellini beans, drained and rinsed<br><br>
3+ cups vegetable broth<br><br>
salt and pepper<br><br>
1/4 cup cilantro leaves (optional)<br><br>
Better than Sour Cream for garnish (optional)<br><br><br><br><br><br>
Instructions:<br><br>

In a food processor, process the onion, jalapeno pepper, celery, bell pepper and garlic until the consistency of chunky salsa. Heat the oil in a dutch oven, and add the just processed onion mixture. Add the canned chilies, the cumin, the coriander and stir. Cook the mixture, covered, until the vegetables are soft - about 10 minutes.<br><br><br><br>
Transfer 3/4 cup of the vegetable mixture back to the food processor. Add 3/4 cup cannellini beans and 3/4 cup vegetable broth. Process until smooth. Add the mix back into the remaining vegetables, add the rest of the broth, the rest of the cannellini beans, and the Chick'n Strips. Add salt and pepper to taste and adjust the other seasoning. Cook for 10 minutes or until hot. You can also make this early in the day, and refridgerate until meal time. This allows the flavors to develop nicely.<br><br><br><br><br><br>

Serve with the chopped cilantro leaves and a dollop of BTSC.

I made a recipe very similar to this when I was omni (but admittedly not with chick'n). This sounds excellent! I should've thought fake chicken would work (duh)... thanks a lot!

White chili is really just chili without the tomato sauce. It tastes really good. I love it.
