Why do you need to blanch some things? Do you really need to blanch stuff? My freezer can flash freeze stuff in under an hour when i have it set to maximum cold.<br><br>
I have been thinking about freezing fruits and vegetables to use in smoothies. Does anyone know the actual science behind why or why not to freeze stuff?

I prefer fresh veggies simply because they taste better. But in regards to nutritional value, the science is debatable, and the conclusions vary greatly. Even if there is some nutrient loss, if you are getting most of your veggies frozen you are not likely to suffer from any nutrient deficiencies as a result.

as for fruit for smoothies I just freeze it. Never had good luck with vegetables--blanching or not seemed to make them go all horrible and yuck. But fruit freezes well. I freeze a punnet of strawberries and then whiz it in my vita mix with a bit of water and half a lime and make sorbet. Yum.

I freeze bananas in their skins for smoothies. That works fine, you just have to cut the skins off when you want to use them, which is easy if you run them under water first. For other smoothie fruit I just buy it already frozen, but I think berries would freeze well as they are anyway.<br><br>
ETA: I also had success slicing some potatoes into chips and freezing them. Froze them on a tray so they wouldn't clump together, then tipped them into a bag. I was trying this out because I was going away because they would have gone bad had I left them. They have cooked fine in the oven with a light spray of cooking oil.

I freeze fruit, but not vegetables. Fruits are great frozen to make for sorbets or smoohies. If I don't think I'll use vegetables fast enough I won't even buy the fresh ones and I'll just buy the bagged frozen ones.

I frequently freeze all kinds of fruit but rarely freeze veggies unless they are in a soup or other meal. I use veggies up too fast for the need to freeze them plus I don't like how the texture changes once they are frozen. I've never had luck freezing them successfully. They've always come out mushy and gross once they defrost.

an important key to remember when freezing fruit and veg is to do it when they are the freshest, don't wait days after you buy them to freeze. Freeze as soon as you can.<br><br>
i eat seasonally and often end up with an abundance of one kind of fruit or veg at once. had lbs of strawberries recently that I hulled and froze promptly after buying, great for adding to smoothies or blending up for granita. when bananas are on sale I buy several bunches and freeze them, same with other berries like blueberries.<br><br>
corn freezes well, so do snap peas and snow peas,

Why is it important to freeze right away? I tend to do both. I freeze some things right away but others I'll tend to chuck into the freezer when they start too look "iffy".
