AmySF got me dreaming about salad bars, and I thought about what I like in my "perfect" salad:

Raw spinach and dark-leafed lettuce

Sliced mushrooms

Sliced purple cabbage

Slivered carrots

Cherry tomatoes

a very few chunks of broccoli

Garbanzo beans

Pineapple chunks!

Raisins!

Toasted sesame seeds

French or Poppy seed dressing (label read!)

and a side of three-bean salad.

How do you create a salad masterpiece at a salad bar?

baby spinach

grape tomatoes

mushrooms (all kinds!)

cucumber

red and yellow bell peppers

alfalfa sprouts

chickpeas

balsalmic vinegarette

sunflower seeds

tempeh bacon (fried until crispy and cut into little bits)

And in a perfect universe, there would be such thing as vegan blue cheese crumbles.

I eat a really big salad every day. Usually:

romaine

spinach

red pepper

green onions

cucumber

green peas

garbanzos

fruit: may include blueberries, dried apricots, fresh nectarine, blackberries, apples, figs (usually one or two of the above)

pickled banana peppers

broccoli

grated carrot

grated radish

grated beet

kalamata olives (just a few)

diced snow peas

some kind of homemade dressing

torn spinach or baby spinach

a generous bed of julienne cut jicama

a bunch of sliced mushrooms

a sprinkling of blue cheese

raspberry vinegar drizzled over the whole thing

I love the sweetness of the jicama mixing with the sour of the raspberry vinegar backed up by the earthy mushrooms, pungent blue cheese and backed by the solid flavor of the spinach.

jicama! My favorite salad bar doesn't have it, and I rarely buy it....but it may have to go on the list today!
