We've all heard it a million times from unimaginative omnis when they first hear you're vegan. It's such a boring and predictable cliche that I feel dirty just typing it.<br><br><br><br>
To answer the question, I thought it might be kind of neat to start a thread where you show off what you had for dinner.<br><br><br><br>
The only ground rules are that it:<br><br><br><br>
a) has to be a vegan<br><br><br><br><b>b) you have to include a picture</b><br><br><br><br>
c) it has to be a home cooked meal (something, you know...with ingredients)<br><br><br><br>
and<br><br><br><br>
d) include a description or recipe.<br><br><br><br><br><br>

Well, okay. Since you asked, tonight I had a toasted focaccia sandwich made with Tofutti Better Than Cream Cheese, sliced avacados, roasted red peppers, tomatoes and mixed greens served with a baked potato with olive oil, celtic sea salt and Tofutti fake sour cream.<br><br><br><br>
(The rosemary is just for garnish.)<br><br><br><br>
So, yeah.<br><br><br><br>
What do <i>you</i> eat?<br><br><br><br>

Great thread - we've had a couple similar and never had many posts... (I'm weird, I ALWAYS take pictures of my food...)<br><br><br><br>
We had seitan cutlets with mashed taters and gravy and lots and lots of corn on the cob which I didn't get a picture of (but you all know what that looks like anyway).<br><br><br><br>

No recipe or anything, just some random stuff.<br><br>
(Rice, Veggie Crumbles, Tomato Sauce, Corn, Onion) on a bed of Romaine Lettuce with an Okra side.<br><br><br><br>

You guys have already proven wrong a coworker of mine who said just yesterday, and I quote:<br><br><br><br>
"Oh yeah. You eat all that bland <i>vegan</i> food."<br><br><br><br>
(She said "vegan" to rhyme with scum.)<br><br><br><br><br><br>
This is the same chick who brings some sludgy brown meat and pototo looking thing to work for lunch at least twice a week. In fact, I don't think I have ever seen her eat food that actually had a colour. She's a brownivore.<br><br><br><br>

What an awesome thread!! Every picture I saw my jaw dropped! Gorgeous food people!! BLAND VEGAN FOOD!! HAHAHAHAHHAHAHAHHA!!!! I will post my dinner tonight. I am making multigrain pasta with "cheese" sauce with purple cauliflour and sweet potatoe on the side with agave nectar and some earth balance.

Nothing too exciting tonight I'm afraid—breakfast burritos with a bit of mixed greens and some steamed carrots. Just 'cuz that's the way I like to rock my burritos.<br><br><br><br>
The burritos are made with shredded fried potatoes and Yves breakfast links fried in one pan. In another I fry up some tofu scramblers which is basically just crumbled tofu with turmeric and onion powder.<br><br><br><br>
I put it in a whole wheat wrap with tomato, Tofutti "Sour Cream" and salsa. Also a slice of Tofutti cheese.<br><br><br><br>
The best part is it makes four, so, you know—lunch tomorrow. <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)"><br><br><br><br>

I never think to take pictures of my food. It rarely looks good anyways (tastes like heaven though)

I've got dinner cookin' right now. Potato & Edamame Curry over barley with Sweet & Sour Carrots on the side. It smells divine. I'll have to snap a pic when I've got it served up.

There isn't really a "recipe" per se for the eggplant dish. It was inspired by some food "porn" posted by Isa Chandra Moskowitz on her website, the Post Punk Kitchen.<br><br><br><br>
Basically what I did was slice 2 eggplants very thin, covered them with seasoned flour, dipped into soymilk, and then back into the flour again. Then I fried them in evoo, made up a batch of tofu ricotta, mixed it up with a package of thawed frozen organic spinach (time saver), and then spread some on each eggplant slice and rolled the lil babies up. I had some spare cheddar fyh so I decided to top each roll with a sprinkle. They were baked (covered with foil) for about 30 minutes at 375.
