Just curious as to what everyone made? Write your list below and any pix you happened to take?

For me...

This year, I made most things gluten-free ("gf"), too, (except the stuffing**) and it was surprisingly easy to do so! In fact, most of my recipes were already gluten-free and others I only had to make slight adjustments. That was kewl.

I did have to make "one" for my omni hubby and visiting FIL w/his new friend. I didn't mind having to do so. Hubby was thankful for me taking care of him in this way. He otherwise eats, happily, vegan at home.

So anyway, I made (all from scratch):

1) Mashed Poatoes w/ fresh made roasted garlic

2) Wild Rice w/ cranberries

3) Roasted Asparagus

4) Sweet Potato Casserole (with a crisp topping) [last minute dish]

5) Pecan Pie - another last minute add-in

6) Apple Crisp

7) Stuffing (only non-gf thing I made b/c I hadn't had a chance to make a gluten-free one ahead of time and taste it... so I'm making one this weekend to see how it is before I try to incorporate that in to the menu for Xmas)

8) Impossible Pumpkin Pie - LOL, actually, I meant to make one that was gf and had a crust but ... I read the recipe wrong and didn't see the part that (a) the crust did NOT need to be fully cooked ahead of time and (b) it was supposed to "set" in the refrigerator over night. Whoops. I was out of time. So, I did a quick hunt on the 'net at the last minute and found a recipe that was vegan, gluten-free, fat free, nut-free, soy-free and NO CRUST required. (That was the best part.) It's so flipping easy; I've already made another one and half that one is already gone, too. REALLY YUMMY. Will have to post that one, here.

9) Cranberry Sauce - a raw one. Really, really good.

10) Mushroom Gravy - I could drink it.

I meant to make some garlicky gluten-free rolls but forgot until we were sitting down. Oh well. Gonna make some of those this weekend. And it seems like there's something else I made but am not listing above... can't remember... ok, whatever!

Needless to say, I was EXHAUSTED after cooking all this stuff all day long (literally) in the kitchen.

Now, my FIL and his friend, had no idea that everything but the "one" dish was totally vegan and mostly gluten-free. And boy did my FIL STUFF himself. I've never seen him shovel down so much food. But as a hostess, I love to see my guest eat and Eat and EAT!

Oh and it amazes and surprises me how easy it is to make a vegan ... and now even a gluten-free... holiday meal.

So... again... what did you make and how did everything go?

We chose a very low key Thanksgiving this year. My parents came over and we watched Happy Feet.

I'm Vegan and my mom eats almost completely Vegan since she started having heart attacks. I'm so very proud of her. I don't normally buy non-Vegan stuff, but we did have some dairy sour cream, cheese and my Dad brought himself a mini-crockpot of shredded animal something. I did not have to look at a carcass or smell that. I hate the smell of turkey. It's foul. Why don't people realize it smells so bad?

We ate big bean burritos with beans, rice, tofutti sour cream, regular sour cream, shredded cheese, fresh roasted green chilis, corn, guacamole, chips, three kinds of salsa and limes...and beer and wine and sparkling cider stuff.

Dessert was apple pie, coconut cupcakes, brownies and 5 kinds of Soy Delicious.

Happy Feet was a good movie to watch, too!

I'm not exactly sure of everything that was in my main dish (all vegan tho) but it had wild mushrooms, walnuts, garlic and some other fun stuff and my gosh it was so good!!!! There was also a side of mashed potato and green beans. My DH worked on TG, at a fine dining restaurant, so of course my meal was awesome. I had wine with the meal followed by espresso with irish wiskey and this dar choc, pecan, something else tart thing. yum!

My DH told his mgr that I would be coming in and they all know (at his job) my diet restrictions and hooked me up

eta: oh, and i had a lovely beet salad that had walnuts and other stuff that I can't name. I'm so not polished. I usually don't understand half the stuff they have on their menu. They do have their own private mushroom picker tho.

Fess up on the whip topping. I got a new brand of coconut milk and I was amazed at how fatty it was. I couldn't even shake the can. It made excellent frosting for the cupcakes and the whole time I was thinking if I had one of those whipped cream makers I would have stuffed it in there and see what happens.

I went to my parent's house.... They are total meat-eaters and had the whole dead bird and everything, but my mother also went out of her way and made a special meal just for me. My favorite food, homemade meatballs with rigatoni. As well as several side dishes, and several desserts. My mom is the bestest.

what happens is that you get something with the same texture as whipped cream and a faint coconut flavor. you have to let the can sit until it seperates and decant the liquid from the top and it helps to have it as cold as possible, just like cream.
