What cheese tastes better melted to you

I think PepperJack is my all favorite. I always pic that when I am at Subway. A little spice is nice.
Mozzarella does melt slow.

Colby/cheddar is great for a mild cheddar. I don't really like a strong cheddar.

That Laughing Cow brand is not bad with only like 60 calories but does not melt very good. But can be good for the hips.

Any L/O want to share their favorite melted cheese.

Well I'm the veggie rennet type . So it reduces my variety , but I go for the milder types with a light shake of pepper
Sheese is my favorite but it's from Scotland and costs 9 bux for one thing of it so...

Also I tried like 4 different vegan types for grilled cheese and the best one personally is the galaxy international (I think) rice cheese (the vegan version cause they have one with casein as well).
Vegan cheese is not cheese. Them vegans just want to hijack the name. There is no such such name under the vegan sun.
Even though I'm vegan, I agree with goettling here. She asked for LACTO-OVO ideas and suggestions... marching in with your vegan cheese and rice cheese suggestions is not in keeping with the original post in the thread. If you want to talk about those cheeses, great, but go post in the Vegan section!

(And she's right - vegan "cheese" doesn't deserve to be called "cheese").

That said, I'll leave now, since I don't have any cheese suggestions...

I've currently got a selection in my fridge (all vegetarian and all produced by a tiny company in south Wales):

Welsh Ale, Mustard and Leek.

White wine and Elderflower

Chili

Cider and Onion marmalade.

Strange combos, but all fabulous and they are really versatile. Great on crackers/in a sandwich, but all of them melt well too...however, the stronger flavours, like the chili one, are best melted.... the milder flavours seem to be lost a little when heated.

I love baked brie - can you really go wrong with wrapping brie in puff pastry and baking it?!


I also like brie heated up in the oven, smothered in onion garlic jam

blimey... now brie in breadcrumbs, or camembert, - love it with redcurrant jelly.. but I've never tried brie in puff pastry... That's defo going on my list!
I don't eat a lot of cheese, but there are times I do get craving for melted cheese.

My favorite melted cheese has to be fondue which is Gruyere and Emmenthaler.

My next favorite would be the Cheddar/American cheese blend in a really creamy macaroni and cheese.

Lastly I enjoy Provalone or Munster melted on the top of a vegetarian meatball sandwich.

I have to say that the soy cheese that one of the local pizza places uses is excellent and I prefer it to the standard pizza Mozerella.
Provalone, coly/jack/mozzzerella--I like the white cheses the best. I love it melted on bread with garlic and margerine.

Not to mention that the dictionary definition of "cheese" includes anything that is "cheese-like" (and we can presume they're referring to cow milk cheese, so "like" cow-milk cheese).
i like baked brie, like amy, with fruit and triscuits.

The one cheese that I have to eat melted is swiss.

I've been on a roll of making subs and melting the cheese in the toaster oven. I need to stop. I guess it is just comfort food. I should own a fondue pot.

My sister makes this every year for our Holiday dinner. (I don't eat it,) but I have always thought it was a unique combination she must have came up with... interesting!

When I read the thread subject line I thought the poster was asking for the best non dairy cheeses since it was asking about melting. I was going to suggest the Almond cheese you can get at Sun Harvest Farms. I'm not vegan (lacto-ovo vegetarian), but I use this because it's so low in calories. As I read on and saw how he got snapped at - I decided..... guess not. I thought it was a little rude to pounce like that too.

As for dairy cheese - for the best meltability I like Jack all the way. Preferably Jalapeno Jack.
