Hummus is my favorite, although I can't make it from scratch. PB (although I'm bad and buy the overly processed stuff instead of natural PB) and any vegan-appropriate jelly type substance. PB and a honey sub is good too. Cosmo's Vegan Shoppe sells a totally awesome vegan honey alternative. (Just Like Honey rice nectar)

There's a PB & white chocolate thing that's vegan, can't remember the manufacturer right offhand but I saw it at Target. Missleigh knows what it is, maybe she'll help us out. <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title="

Pineapple sandwiches are good too, especially with vegenaise.

I've been known to eat vegan baked beans on toast, too, and make wraps with tabouleh and even couscous. Those could easily be done in a sandwich instead, although I suppose it'd be a bit starchy. ^^;;

ETA: I can't believe I forgot my most favorite! A VLT, made with vegan bacon, lettuce and tomato with vegenaise.
