Lately I have been on a kick and having tomato, onion, hummus and avocado on whole wheat with lots of vegannaise! I stop myself after one but I swear I could eat three easily. Yum!

Hummus is my favorite, although I can't make it from scratch. PB (although I'm bad and buy the overly processed stuff instead of natural PB) and any vegan-appropriate jelly type substance. PB and a honey sub is good too. Cosmo's Vegan Shoppe sells a totally awesome vegan honey alternative. (Just Like Honey rice nectar)<br><br><br><br>
There's a PB & white chocolate thing that's vegan, can't remember the manufacturer right offhand but I saw it at Target. Missleigh knows what it is, maybe she'll help us out. <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)"><br><br><br><br>
Pineapple sandwiches are good too, especially with vegenaise. <img alt="" class="inlineimg" src="/images/smilies/lick.gif" style="border:0px solid;" title=":lick:"><br><br><br><br>
I've been known to eat vegan baked beans on toast, too, and make wraps with tabouleh and even couscous. Those could easily be done in a sandwich instead, although I suppose it'd be a bit starchy. ^^;;<br><br><br><br>
ETA: I can't believe I forgot my most favorite! A VLT, made with vegan bacon, lettuce and tomato with vegenaise. <img alt="" class="inlineimg" src="/images/smilies/drool.gif" style="border:0px solid;" title=":drool:">

I cut back on the tahini and olive oil a little and add about 4 tbsp of Nayonaise to compensate. I don't bother with the toasted sesame seeds.<br><br><br><br>
It has a sort of "tuna" salady taste to it. I make a batch of this a week and have it in a ww pita with tomato and romaine lettuce for my workday lunches.<br><br><br><br>
For me it's worth it to find a nice quality tomato. I use heritage tomatoes. They look like special needs vegetables, but MAN do they taste great. Really makes the sammich for me.<br><br><br><br>

I used quinoa...chickpeas...cashews...mushrooms..carrots. ..nutritional yeast...lots of good stuff.<br><br><br><br>
Slap on two whole wheat bread...lots of fresh lettuce...some ketchup on the loaf.....cut into triangles...sorry I have a thing where sandwiches need to be cut that way ....<br><br><br><br>
you probably won't reach for any of the store bought gunk they are trying to pass as sandwiches.

tahini + erm appel stroop (it's dutch, forgot what it is in english...but it tastes a bit like..molasses except tons yummier and basically made from apples, pectin and sugar) + sandwich = iron/calcium rich and yummy<br><br><br><br>
(mini soy chunks + pb + soysauce) + sandwich = satay soy chunks on bread hehe.<br><br>
I usually make this when I haven't eaten a lot and am absolutely starving 'cause it's so easy and filling.

Stack up a bunch of veggies with some vegan mayo. Shredded carrots, sliced onion, bell pepper, cucumber, tomato, avocado, throw a handful of baby spinach on top. Sometimes I make it on an onion bun and I call it "Big Green." I also like to cook up some Fakin' Bacon and throw on a few slices.<br><br><br><br>
I also like to make <a href="http://www.veggieboards.com/boards/showthread.php?t=57855" target="_blank">Curried Chickpea Salad</a>. I just made some yesterday.<br><br><br><br>

Scrambled tofu and alfalfa sprouts.<br><br>
Hummus and tomatos.<br><br>
Any bean or lentil "loaf" type recipe that you're fond of.<br><br>
Breaded and fried (yes, I know, FRIED) eggplant or summer-squash slices.<br><br>
There's a million "mock meat" items on health-food store shelves if you like that sort of thing.<br><br>
Chopped black and green olives mixed with Tofutti Cream 'cheese'.<br><br>
Pesto and tomato slices.<br><br>
Fried tofu slices.<br><br><br><blockquote><p>Tofu "chicken" salad:<br><br>
---Freeze and thaw a block of firm tofu. Squeeze all the moisture out. "Shred" with your hands or a fork. Sprinkle with nutritional yeast and a pinch of vegetarian "chicken" flavor broth powder/bullion base. Mix with Veganaise and a little pickle relish, some chopped celery and sweet onion if you want... Best stuff EVER!</p></blockquote>

Yum! Everything mentioned so far sounds pretty appealing to me (except maybe the pineapple sandwich, sorry!) <img alt="" class="inlineimg" src="/images/smilies/laugh.gif" style="border:0px solid;" title=":lol:"><br><br><br><br>
I'll add <b>eggless tofu or tempeh salad</b>, regular or curried. And also, <b>roasted vegetables</b> (red peppers, eggplant, zuchinni, onions, etc) with a touch of hummous or olive-oil dressing and a smattering of baby greens or fresh herbs.

I still like classic PBJ or ABJ (Almond butter). Sometimes I'll just put refried black beans or whole black beans that I've crushed with a fork on a sandwich.<br><br><br><br>
I also like Nate's vegetarian non-meat balls on a french roll. We usually heat up the non-meat balls in pasta sauce before putting them on the sandwich. We also toast the rolls under the broiler before making the sandwiches. My wife and son like to have a piece of mozerella melted on under the broiler, but I prefer my sandwich without cheese.

My fav is chickpea salad. Just some chickpeas and vegenaise, with some nutritional yeast and sea salt mashed with a fork and some green onions. Either in a pita or on whole grain bread.<br><br><br><br>
My second fav is fakin' bacon and avacado. No tomato. Raw tomato = <img alt="" class="inlineimg" src="/images/smilies/spew.gif" style="border:0px solid;" title=":spew:"> for me.<br><br><br><br>
Oh and I don't make them at home, but I looooove roasted vegetable sandwiches-especially with eggplant and roasted red peppers, and maybe some portobellini mushrooms. Or a big portabello cap. <img alt="" class="inlineimg" src="/images/smilies/drool.gif" style="border:0px solid;" title=":drool:">

Y'know, I can kind of see the bananas and black beans thing. It would be a little like a sweet version of Carribean food where there's lots of black beans and plantain involved. My one attempt at cooking plantain didn't work out.

You're right! But I guess it's kinda different with regular bananas, right? They're really sweet and they get all mushy when she mixes them with the hot beans. <img alt="" class="inlineimg" src="/images/smilies/tongue3.gif" style="border:0px solid;" title=":p">
