I bought this massive bag of shelled walnuts at Costco. I just love cooking with walnuts.


We've had the bag open for about a week...and I just now noticed that it said it should be refrigerated after it was opened.

Do walnuts go rancid if they're not refrigerated?

I've heard they do, but I've never had it happen, even after a month in a cupboard. I refrigerate them just in case anyway.

More importantly, you cook with walnuts? Care to share a recipe or two?

OMG, they're awesome to cook with. When I roast veggies, I also add walnuts to the mix. I also add them to TVP loaf, stuffed mushrooms, meatless wheat balls, just....there are so many. lol. They add great texture. Its gotten to the point that my husband is known to request his oatmeal sans walnuts, because I add them to everything.


I don't usually write down recipes, but I'm planning on starting. So I'll share at some indeterminate point in the future.....when I'm not procrastinating so much.

I've never had walnuts go bad... I shell a few cups at a time and forget about them sometimes, and I've had them sit on a shelf for months without noticing a taste change before.

and don't forget to try chopped walnuts in cornbread. they're wonderful

I had a fancy dinner out this week as an early-birthday dinner with my parents, and the restaurant we ate at served bread rolls whihc were brown with walnuts. It was absolutely delicious bread, I want to try and make some myself. Coffee and walnut cake is also on my to-bake list.
We have a walnut tree at my parents' house and they do last a long time. I've never refridgerated them.

I just throw them in a toaster oven for a few minutes. They come out roasted, warm, and delicious. One minute too long and they turn black though

They have oils and them and will spoil after a while. I freeze or refrigerate all of my nuts (ha). Its almost the number one thing you learn on the food network.... I have had walnuts spoil on the shelf(and I typically eat them quite quickly). You'll know it if they do, they'll taste gross. Definitely stick them in the fridge to prolong life. :)
