Since I started cooking with seitan, i noticed that my husband and I can finish 5 pounds of vital wheat gluten in 1 1/2 month. I'm thinking of buying a bulk vital wheat of 50 pounds, but it comes in ONE big 50 pound sack. I only have a medium sized refrigerator of 18cubic therefore there is no way i can fit 50 lb of flour even if i divided them into a 5lb container/bags.

So i was wondering, what is the shelf life of vital wheat flour when it's just sitting there on the kitchen floor in a big sac that i presume is NOT resealable?
