I see in a lot of recipes "vital wheat gluten", like in the veggeroni recipe that was posted here (and looks delicious!). Is it a flour with more gluten in it?

I don't think I can get it here, I can only buy a frozen chunk of seitan. Can I use it for those recipes and if so, how?

Vital Wheat Gluten is an ingredient used in making seitan. (The key ingredient, really) You would not be able to sub pre-made seitan for vital wheat gluten in recipes such as the veggie pepperoni. There is probably some way to do it involving making seitan from scratch the more difficult way... washing whole wheat bread flour until all the starch is gone.

I did a long search on the net yesterday and found out that maybe I can get vital wheat gluten here, I just need to look for it in special stores. I'm going to one today and I hope to have good news when I come back
