Mexican Bean Burgers<br><br><br><br><br><br>
Ingredients<br><br><br><br>
1 (15 ounce) can kidney beans<br><br>
1/2 cup chopped green bell pepper<br><br>
1/2 cup chopped onion<br><br>
1 carrots, sliced<br><br>
2 cups salsa<br><br>
1 cup dried bread crumbs<br><br>
1/2 cup whole wheat flour<br><br>
1/2 teaspoon ground black pepper<br><br>
salt to taste<br><br>
1 pinch chili powder<br><br><br><br>
Directions<br><br><br><br>
1 Steam carrot until soft.<br><br>
2 Mash beans and steamed carrot in a large bowl. Mix in green pepper, onion, salsa, bread crumbs, and whole wheat flour. Season with salt, black pepper, and chili powder. Add flour to create a firmer mixture, or more salsa if the mixture is too stiff.<br><br>
3 Form mixture into patties.<br><br>
4 Bake at 425 degrees F (220 degrees C) for 15 to 20 minutes, or until browned.<br><br><br><br><br><br>
