I would like to make veggie burgers from scratch. But, need a recipe. Hope some of you long time vegetarians canhelp out.<br><br>

Zucchini Burgers<br><br>
4 c grated zucchini<br><br>
1 c cooked brown rice<br><br>
1 lb tofu<br><br>
1/2 c vital wheat gluten<br><br>
1/4 cup chopped fresh basil<br><br>
1/4 c chopped sun-dried tomatoes<br><br>
1 small onion, grated<br><br>
2 cloves garlic, minced<br><br>
1 1/2 t salt<br><br>
1/8 t pepper<br><br><br><br>
Pre-heat oven to 350 F<br><br>
Mix all ingredients together and form into burgers.<br><br>
arrange the burgers on an oiled baking sheet, and bake for 15 minutes on each side until browned.<br><br><br><br>
110 cal per burger, 11 g protien, 2 g fat, 11 g carbs<br><br><br><br>

Mexican Bean Burgers<br><br><br><br><br><br>
1 (15 ounce) can kidney beans<br><br>
1/2 cup chopped green bell pepper<br><br>
1/2 cup chopped onion<br><br>
1 carrots, sliced<br><br>
2 cups salsa<br><br>
1 cup dried bread crumbs<br><br>
1/2 cup whole wheat flour<br><br>
1/2 teaspoon ground black pepper<br><br>
salt to taste<br><br>
1 pinch chili powder<br><br><br><br>
1 Steam carrot until soft.<br><br>
2 Mash beans and steamed carrot in a large bowl. Mix in green pepper, onion, salsa, bread crumbs, and whole wheat flour. Season with salt, black pepper, and chili powder. Add flour to create a firmer mixture, or more salsa if the mixture is too stiff.<br><br>
3 Form mixture into patties.<br><br>
4 Bake at 425 degrees F (220 degrees C) for 15 to 20 minutes, or until browned.<br><br><br><br><br><br>
Makes 8 servings.
