Vegetarian Picadillo

Suitable for a: vegetarian diet



2 packages Quorn Ground or Morningstar Crumbles or other ground meat substitute (24 ounces)

1/4 cup olive oil

4-6 onions (depending on size), chopped

2-3 green peppers, seeded and chopped

6-8 cloves garlic, chopped

1 6-ounce can tomato paste

1/2 cup pimento-stuffed olives, chopped

3 1/2 ounces capers (1 jar, drained)

3/4 cup raisins

2 bay leaves

1 teaspoon oregano

Ground pepper, to taste



In a 5-quart, non-stick pot, thaw the Quorn Grounds. Do not add water, just let them thaw out. Then add everything else. Cook over medium heat, stirring occasionally, for about a half hour.

Additional comments:


Serve with white rice, black beans, and fried plantains or sliced bananas. Makes 4-6 servings.

Note: Picadillo is Spanish for chopped-up. This dish is served in Cuba, Puerto Rico, and some Latin American countries. Do not add water.
