I started my vegetarian journey on February 3, 2011. It wasn't something that I planned. I am a horrible planner and if I force myself to do something then I usually fall out of line with it very quickly. I am a mother of three daughters. After having all three of my kids within 5 years, I have been having a hard time trying to get the extra weight off. I went from fad diets to just giving up. I worked in a diner and I was the head cook. I would literally smell meat from morning til night. I don't need to tell you what that did to me. ick. but at the beginning of this year I was finally getting sick of consuming meat. After being sick for days everytime I would eat one of my favorite meals I decided to just give it up. I wasn't craving meat. I hated the smell of it. I watched my brother get to the unhealthy weight of 250 at the age of 14 because all that he ever eats is meat. He's never had a veggie in his life. Well after seeing all of that I knew that it was the healthiest and best choice of my life. I wish I would've done this earlier.
I've had some family members trying to use their "knowledge" and tell me that I need my protein and meat is good as long as it is in small portions. NO! Im done eatting what everyone else wants me to eat. Humans are not meant to consume the saturated fats that meat has in it. We have to worry about heart disease, high cholesterol and all of these horrible things that you can eliminate if you just choose a healthier diet. I would love to add years to my life. Sure some people can live to be in their 80's while still eatting flesh foods. But really... what is their quality of life? How healthy do they feel? I don't want to bog down my mind and body by putting chemicals and POOP into my system. I've never been so happy with a decision as I am with this. On a side note, my husband and kids know how I feel about being a vegetarian. They still eat flesh foods. I don't like it but I waited until i was in my twenties to change my habits. I will not take away food that my kids or husband want. I educate them on what goes into the process of getting that meat they want to eat. My middle daughter is practically a vegetarian anyway. She's never wanted meat. Just a little now and then. My husband is actually to the point where he feels bad anytime that he eats flesh food. He looks ashamed. Not that I am trying to shame him! I wouldn't do that. But it's nice to know that educating my carnivore husband has made him see the light of veggies. (just so you know, he is allergic to all fresh fruits and vegetables and will have to go to the emergency room asap if he does consume these without them being cooked first.)
It is nice to meet you all and I can't wait to hear from all of you veggie lovers!
