Yields 4 servings

2 cups unsweetened fruit juice

1/8 tsp. Stevia Extract Powder

2 tblsp. Agar Agar

a few drops of vanilla extract

lettuce leaves or alfalfa sprouts

fruit pieces for garnish

chopped nuts

pour-on sauce {a recipe follows}

Place juice, stevia, and agar agar in a small saucepan and mix well. Bring to a boil while stirring. Reduce heat and simmer 5 minutes to completely dissolve agar agar, stirring occasionally. Set aside for 15 minutes. Pour into molds or a bowl. Refrigerate, undisturbed, until firm.

To serve , garnish with lettuce, alfalfa sprouts, fruit pieces, nuts and sauce if desired.

Blackberry Sauce,

4 cups fresh or frozen blackberries

1/3 cup water

1/3 tsp. Stevia extract powder

4 tsp. arrowroot powder or cornstarch

1/3 cup water

Measure blackberries, water and stevia into a medium saucepan. Bring to a boil, reduce heat and simmer 3 minutes.

Dissolve cornstarch in the remaining 1/3 cup water and stir into the cooking sauce. Continue to simmer another 2 minutes, stirring as needed. Serve warm or chilled. Refrigerate leftovers.

Variation: Stir in 1/16 tsp. coriander or cinnamon.
