Yields 4 servings<br><br>
2 cups unsweetened fruit juice<br><br>
1/8 tsp. Stevia Extract Powder<br><br>
2 tblsp. Agar Agar<br><br>
a few drops of vanilla extract<br><br>
lettuce leaves or alfalfa sprouts<br><br>
fruit pieces for garnish<br><br>
chopped nuts<br><br>
pour-on sauce {a recipe follows}<br><br><br><br>
Place juice, stevia, and agar agar in a small saucepan and mix well. Bring to a boil while stirring. Reduce heat and simmer 5 minutes to completely dissolve agar agar, stirring occasionally. Set aside for 15 minutes. Pour into molds or a bowl. Refrigerate, undisturbed, until firm.<br><br>
To serve , garnish with lettuce, alfalfa sprouts, fruit pieces, nuts and sauce if desired.<br><br><br><br>
Blackberry Sauce,<br><br><br><br>
4 cups fresh or frozen blackberries<br><br>
1/3 cup water<br><br>
1/3 tsp. Stevia extract powder<br><br>
4 tsp. arrowroot powder or cornstarch<br><br>
1/3 cup water<br><br><br><br>
Measure blackberries, water and stevia into a medium saucepan. Bring to a boil, reduce heat and simmer 3 minutes.<br><br>
Dissolve cornstarch in the remaining 1/3 cup water and stir into the cooking sauce. Continue to simmer another 2 minutes, stirring as needed. Serve warm or chilled. Refrigerate leftovers.<br><br>
Variation: Stir in 1/16 tsp. coriander or cinnamon.<br><br><br><br><br><br>
