Vegetable Pies / Hot Pockets<br><br>

Seems like you could fill these with any combination of things you wanted.<br><br><br><br>
Ingredients :<br><br><br><br>
Dough<br><br>
1 T sugar<br><br>
1 package dry yeast (2 ½ t)<br><br>
1 C lukewarm water<br><br>
3 C flour<br><br>
½ t salt<br><br>
1/8 t ground ginger<br><br>
4 T olive oil<br><br><br><br><br><br><br><br><br><br>
Fillings<br><br><br><br>
Spinach<br><br>
10oz spinach, washed, dried and finely chopped<br><br>
2 med. Onions, finely chopped<br><br>
3 T pine nuts or slivered almonds<br><br>
4 T olive oil<br><br>
2 T lemon juice<br><br>
¾ t salt<br><br>
½ t pepper<br><br>
½ t nutmeg<br><br>
1/8 t cayenne pepper<br><br><br><br>
Mix all ingredients thoroughly.<br><br><br><br>
Zucchini and pea filling<br><br>
2 ½ C ¼ inch cubes of unpeeled zucchini<br><br>
1 ½ C fresh or frozen peas<br><br>
1 large onion, finely chopped<br><br>
4 cloves of garlic, crushed<br><br>
4 T ground almonds<br><br>
1 t salt<br><br>
1 t oregano<br><br>
½ t pepper<br><br>
½ t paprika<br><br>
¼ t cayenne pepper<br><br><br><br>
Mix all ingredients thoroughly.<br><br><br><br><br><br>
Instructions:<br><br>

Dissolve yeast and sugar in ¼ C of the lukewarm water and allow to froth.<br><br><br><br>
Combine flour, salt and ginger in a mixing bowl, add the rest of the water, oil and yeast mixture.<br><br><br><br>
Knead into a dough, adding more flour if necessary. Cover and let rise until double in size.<br><br><br><br><br><br>
Form to dough in to 20 balls, let rest for 30 minutes. Roll each ball into a 5 or 6 circle, fill with 2 heaping Tablespoons of filling. Fold the dough over the filling making a half moon shape, seal by pinching the edges together firmly.<br><br><br><br>
Place the pies on a well grease tray, then bake at 350 for 20 minutes or until pies turn golden brown.<br><br><br><br><br><br><br><br>

I love the little hearts that they put around the word Vegetarian , that's really neat .
