Vegetable Biryani<br><br><br><br>
Spicy, quick and delicious!<br><br><br><br>
2 onions, peeled and chopped<br><br>
500g mixed vegetables, chopped into small pieces (for example: green beans, broccoli, cauliflower, carrot, peas)<br><br>
4 tablespoons vegetable oil<br><br>
1 1-inch cinnamon stick<br><br>
6 cloves<br><br>
2 large black cardamom seeds<br><br>
2 teaspoons black cumin powder<br><br>
1 teaspoon salt<br><br>
2 teaspoons coriander<br><br>
2 teaspoons garam masala<br><br>
1 teaspoon turmeric powder<br><br>
2 teaspoons chilli powder/cayenne<br><br>
2 cups Basmati rice (rinsed and soaked for 20 minutes)<br><br>
4 cups cold water<br><br>
Fry the onion in oil until light brown.<br><br>
Add the spices (cinnamon through to the salt in the ingredient list) and fry for 1 minute.<br><br>
Add the chopped vegetables and fry for 4-5 minutes.<br><br>
Add the rice and water and stir.<br><br>
Add the remaining spices (coriander through to chilli powder in the ingredient list).<br><br>
Bring to a boil and reduce temperature slightly until bubbles emerge through the rice.<br><br>
Cover and reduce heat to low. Cook for 12-15 minutes without stirring.<br><br>
Garnish with fresh coriander and serve with a side salad.<br><br>
