So I love IKEA (the Swedish Furniture store) and always used to enjoy the food at their cafe - cheap, tasty and unique, but primarily omni. When I visit now, I miss that part of the experience. I noticed the other day that they sell their Ligonberry preserves and it gave me the idea to re-create their Swedish Meatball plate at home - vegan style.

I got some meatless meatballs, cooked up some baked red potatoes with carrots and rosemary, added some packaged vegan gravy, put some of the lingonberries on the side and voila! Not something I would eat everyday, but at least I can still experience those flavors.

Anyone else have any good fake outs?

I really like stuff like burgers and chips, and sausages and mash. Come to think of it, I don't think I enjoyed the meat versions all that much, but I do like the convenience involved (easy food) and the comfort food factor. I've found certain brands of veggieburgers and sausages that I like, and tend to go for wholemeal bread for the bun, include loads of salad and make dairy free potato mash. I always turns out great. Yum!

Funny you should mention fake meatballs. I'm lazy about cooking, so I just stick to basics, mostly pre-made. Today, I was thinking that since I have spaghetti and a jar of Prego sauce at home, I should try to figure out what to eat with it, since I obviously won't be making meatballs any more. I was thinking of just tossing in some tofu cubes, until I saw fake meatballs in the store and bought those. I'll have to see how that turns out when I make it later in the week, but with such a strong sauce, I think the texture of the meatballs is probably more important than the taste.
