Vegan No bake Chocolate Oatmeal Cookies

Category: Desserts - Cookies

This recipe is suitable for a: vegetarian/vegan diet

Preparation Time: 5 minutes

Serves: 24

Ingredients:

2/3 cup maple syrup

1/4 cup vegetable oil

5 tablespoons unsweetened cocoa powder

1 teaspoon ground cinnamon

1/2 cup peanut butter

1 cup rolled oats

1 teaspoon vanilla extract

Instructions:

DIRECTIONS:

In a saucepan over medium heat combine the maple syrup, oil, cocoa and cinnamon.

Boil for three minutes, stirring constantly.

Remove from heat and stir in the peanut butter, rolled oats and vanilla until well blended.

Drop by heaping spoonfuls onto waxed paper and chill to set, about 30 minutes.

Suz, I'm sure you could. "No-bakes" are an infamous recipe from my youth. We used to call them "chocolate oatmeal cookies" most of the time. I've made them so much, I know the recipe by heart:

Mix 2 cups sugar (2 cups!) with 3 Tablespoons cocoa in the bottom of a large saucepan.

Mix in 1/2 cup milk.

Turn on medium heat, add 1 stick margarine/butter (about 1/2 cup), and stir till melted.

Bring the mixture to a boil, and boil for 3 minutes.

Remove from the heat, add 1 teaspoon of vanilla extract

Add 2 1/2 - 3 cups oats (not quick oats), stirring to coat

Quickly drop them by spoonfuls onto wax paper/cookie sheet and let sit until firm

Seriously, easiest cookies in the world to make and even my crazy omnivore co-workers have loved them.

I've made them before without all of the listed ingredients... and they never really came together. They tasted okay, just never solidified like they should.

I have that problem when baking (or in this case, not baking) things. I remove one element or change one minor detail and end up screwing the whole thing up.

Well, the no-PB recipe I posted isn't just the OP's recipe without the peanut butter (there's a boatload more oats, for instance), so you should be fine.


I may have to make some of these cookies now.

Here's a vegan version that I like to make if it helps:

No Bake Carob Oatmeal Bars (Vegan).

Ingredients

1/3 cup almond milk

3/4 cup agave nectar

1/2 cup carob powder

1/2 cup Earth Balance butter

1 teaspoon vanilla

1/2 cup all natural peanut butter

3 cups quick cooking oats

Directions

1. In a medium saucepan over medium-high heat, mix almond milk, nectar, carob powder, and 'butter.'

2. Bring to full boil for 3 minutes, whisking constantly.

3. Remove from heat and add vanilla and peanut butter.

4. Mix well, then stir in oats and blend well

5. Put into greased 8 x 8 inch pan and refrigerate

Makes 32

That's cool and all, but the other versions are vegan too.

Lol! Sorry, not a carob lover here. I really think those are few, far an in between..

Give me chocolate!!

These Chocolate Oatmeal cookies sound delish! some are cooling in the fridge as I type..

Just made these and they're yummy! (they're supposed to be cooling on the counter, but patience is not a virtue I have when it comes to these sorts of things)

The only thing I'd change is the cinnamon. I like cinnamon and all but it's a bit too *present* in these cookies. I'd say 1/2 tsp would be better, imo

No, but if I were going to use agave I would use less of it. It seems to be more potently sweet than other liquid sweeteners. You could start with less and add until yu have the desired sweetness. I don't think the lesser volume of liquid would have too much of an effect in this recipe unless it was significant (could always reduce the oats a bit too if that was an issue)
