I tried to see if this recipe was anywhere, but did not see it. I have not eaten Mac n Cheese in many years since I am lactose intolerant. I did not even think I would like the taste of cheese, but this was amazing.

Cook 1 1/4 cups of pasta. I used Penne because I did not have macaroni. Drain and rinse with cold water and let sit.

1 1/4 cups of almond, soy, or rice milk-I used almond.
1/2 cup of Nutritional yeast
2 Tbsp yellow miso paste
2 Tbsp of cornstarch
1 Tsp of onion powder
1 Tsp of garlic powder
1/2 Tsp of paprika
1/4 Tsp of Turmeric

Mix all of the ingredients in a sauce pan and heat to almost a boil and then turn to low and stir occasionally till thick. Once it is thick, add the past and let it heat with the sauce while stirring till you get it where you like it.

I find this dish to be extremely rich and high calorie so I will probably try to cut down on the ingredients next time. This batch is about 720 calories. I would probably eat this in one sitting.

If this recipe is from her blog, can you post a link? If it's from the cookbook, I don't think we can post it here, because it violates copyright.

Just noticing your avatar, btw..are you in roller derby?
