Vegan Honey Chili Tofu

Suitable for a: vegan diet

Ingredients:

1 lbs block tofu

1 Tb. cornstarch

1 1/4 t Chinese chili sauce w/garlic

2 t Soy sauce

1 1/2 t Grated ginger root (optional)

1/3 Water

1/4 cup vegan honey substitute

3 T c vinegar

½ bell pepper, chopped

Instructions:

Set oven to 375F, drain and cut tofu into finger-sized rectangles. Bake for roughly 15 minutes on an ungreased pan (put a sheet of aluminium foil between pan and tofu to help prevent sticking).

In a saucepan, combine vinegar, water, cornstarch, chili sauce, honey sub and soy sauce. Cook on medium low heat, stirring frequently.

In a small pan, stir-fry grated ginger for about 2 minutes. Add bell pepper, cook for another minute or two, then add this to the sauce. Keep cooking until sauce is thick.

Gently add tofu pieces into chili mixture. Cook and stir until tofu is coated. Serve over rice.

Serves 2.

This also works well with seiten. Heat up the pre-cooked seiten in the pan with the bell peppers until they're heated through and browned slightly, then continue on as though it were tofu.

Recipe is fairly spicy and sweet.
