VEgan Fettucine Alfredo (Fetti Alf)<br><br>
Category: Main Dishes - Pasta<br><br><br><br>
Suitable for a: vegan diet<br><br><br><br><br><br>
Ingredients:<br><br>
------------------------------------------------------<br><br><br><br>
*2 tbsp of oil<br><br>
*3 garlic cloves<br><br>
*soymilk (seperate into 1 cup & 1 tbsp)<br><br>
*1 1/2 tbsp(and extra for sprinkling) of Parma (or nutritional yeast, herbs, salt)<br><br>
*12 oz egg free fettucine<br><br>
*small head of broccolli<br><br>
*2 tbsp Light Smart Balance (or any other soy margerine)<br><br>
* 1 tbsp lemon juice<br><br>
*1/2 tbsp(and extra for sprinkling) Nature's Seasoning (or salt,pepper & herbs)<br><br><br><br><br><br>
Instructions:<br><br>
------------------------------------------------------<br><br>
1. Put 2 tbsp of oil in medium non stick pan<br><br>
2.begin boiling water for fettucine<br><br>
3. Mince garlic , putin pan over medium heat, stir<br><br>
4. Wait for water to boil, meanwhile as garlic gets significant heat and starts to sizzle , bring heat down to a low setting, stir. (If garlic continues sizzling bring heat down to warm)<br><br>
5. Chop up one small head of broccolli<br><br>
6. AS water reaches a boil , put pasta in pot. In pan add 1 tbsp of smart balance to garlic, stir.<br><br>
7. After Smart Balance melts add 2/3 cup of soymilk, 1 tbsp of Smart Balance, and another 1/3 of a cup soymilk( well actually a little less then 1/3),stir.<br><br>
8. Add 1 tbsp of Parma, 1 tbsp soymilk, 1/2 tbsp of parma,1/2 tbsp Nature's SEasoning to pan (stir in between each ingredient)<br><br>
9. Crank heat up to medium high heat, just before mixture boils bring the heat back down to medium and then to low.<br><br>
10. Add 1 1/2 tbsp of lemon juice to pan, stir vigirously<br><br>
11.Sprinkle Nature's seasoning in mix, stir<br><br>
12. Let mixture sit for 30 seconds<br><br>
13. Strain pasta<br><br>
14. Stir mixture in pan<br><br>
15. Add pasta to pan mixture<br><br>
16. Bring heat back to medium<br><br>
17. Toss pasta in mixture, let it absorb the sauce. *When sauce is absorbed , remaining sauce should be a little liquidy (having an alfredo sauce consistancy) but not soupy. When tossing pasta , it sould become easy to see the bottom of the pan.<br><br>
18. Sprinkle parma on pasta<br><br>
19. Ad broccolli<br><br>
20. When broccolli is cooked to your liking , turnoff heat , let sit for a few seconds to cool & serve.<br><br><br><br><br><br>
Additional comments:<br><br>
------------------------------------------------------<br><br>
Dish should be ready in 20-45 minutes, depending on how fast you cook, I was multi tasking when I made it.

Excellent recipe.<br><br><br><br>
For the parm, I took a recipe from Mollygoat's Green Lasagna that works great:<br><br><br><br>
Faux Parmesan<br><br><br><br>
2/3 cup cashews, blanched almonds, or sesame seeds<br><br>
1/3 cup nutritional yeast flakes<br><br>
1 teaspoon light soy or chickpea miso<br><br><br><br>
Add ingredients to a blender or food processor and process until the nuts are finely ground and the ingredients are well mixed.

I made this today and it turn out yummy! I used Galaxy food vegan grated parma cheese half/half w/plain nutritional yeast. I did that because that brand where I live is expensive for a tiny bottle and the smell of it is powerful!<br><br><br><br>

It smells like traditional "stinky feet" cheese!

made this recipe last week and the husband who is a very picky omni loved it and said 'definitely make this one again'. in addition to the broccoli, i also added sliced baby portobello mushrooms.

thank you for posting this I have been looking for a good alfredo recipe since i switched to being vegan, sounds pretty tasty <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)">
