This cake is so good, moist and sweet, my meat loving BROTHER was raving about it and (psst) he didn't even know it was vegan!!

here's the recipe. EVERYONE SHOULD MAKE THIS!!

(makes 2 cakes, cut all ingredients in half to make one cake)


4 cups unbleached organic flour (any type, but preferrably wheat)

2 tsp baking soda

2 tsp baking powder

4 tsp cinnamon

1 tsp salt

1 1/2 cups soymilk mixed with 3 tsp lemon juice

3 cups unrefined sugar

1 cup soy yogurt

1 1/2 cups more soy milk

1 cup brown sugar

1 cup vegetable oil

2 cups drained and blended pineapple

2 cups grated carrot (about 5 large carrots)

2 cups grated coconut

1 1/2 cups diced walnuts

1 cup raisins (opt.)

mix all together. Bake at 350 degrees until inserted toothpick comes clean.

"cream cheese" frosting (frosts two cakes, cut all ingred. in half to frost one cake)

1 bag confectioners sugar (do they make unrefined?)

1/2 cup margarine

2 tsp vanilla (or 4 tsp coconut milk)

enough soymilk or soy yogurt to mix to a creamy consistency.
