Vegan Bleu Cheese Dressing<br><br>
Category: Condiments, Dressings, Spreads<br><br><br><br>
Suitable for a: vegan diet<br><br><br><br><br><br>
Ingredients:<br><br>
------------------------------------------------------<br><br><br><br>
1/4 C extra firm (silken or regular) or firm tofu crumbled, drained, patted dry<br><br>
1 large garlic clove minced<br><br>
1/4 C lemon juice<br><br>
1/2 C vegan mayo (Vegenaise)<br><br>
2 T tahini<br><br>
2 tsp white miso<br><br>
1 tsp apple cider vinegar<br><br>
2 T fresh parsley<br><br>
2 tsp fresh chives (dry works as well)<br><br>
pinch pepper and salt<br><br>
soymilk if you like it thin<br><br><br><br><br><br>
Instructions:<br><br>
------------------------------------------------------<br><br><br><br>
Crumble the tofu, whisk in the rest of the ingredients, let it set for a while and enjoy. I like to put everything in a wide mouth jar and blend it with a stick blender. The original recipe called for 2 tsp apple cider vinegar, but I found it a bit too tangy. If you are not going to use this up right away cut back on the garlic, otherwise it gets too spicy and can take over the other flavors.<br><br><br><br><br><br>

Hey - I just tried this yesterday! I still have a little (won't admit exactly HOW little) left....<br><br><br><br>
Didn't have the fresh parsley or chives (which is surprising since I have fresh herbs almost ALL the time) but it was still very, very good.

Im gonna try this, seeing as how Im getting tired of my old lemon-tahini standby. Especially since I dont like tahini that much. How long does it last in the fridge?

I'll have to try it as well because the two grocery stores in my area haven't had the nasoya blue cheese dressing the last few weeks....<img alt="" class="inlineimg" src="/images/smilies/sad.gif" style="border:0px solid;" title=":(">

I've kept it for a week without problem. It started to separate, but I stirred it back together and it was fine.
