Vegan Banana Waffles

Vegan Banana Waffles

This recipe is suitable for a: vegetarian/vegan diet

Preparation Time: 5-10 minutes

Serves: 5

Ingredients:

1 banana

1/2 cup vegetable oil

1 3/4 cup (14 oz) almond/rice/soy milk (I use almond)

2 cups whole wheat flour

1/2 teaspoon salt

1 tablespoon sugar

4 teaspoons baking powder

Instructions:

Measure out the wet ingredients and pour into a large bowl. Add the dry ingredients. Mix well. Mash up the banana, (I put it in my blender) and add it to the mixture.

This recipe makes about 5 waffles with my waffle iron, (I use a little over 1/2 cup of batter for each waffle) but the yield will depend on how your iron is shaped. Cook each waffle until steam is no longer coming out the sides of the iron. (takes about 5 minutes).

I usually make a double batch of these at a time and freeze most of them. They're great reheated in the toaster. I got this recipe from an old Betty Crocker cookbook, but I obviously tweaked it to make it vegan.

Wow. That's a lot of oil. Have you tried using less? (I know waffles do better with SOME oil...)
Is it? I don't cook a lot. I thought I had this recipe memorized, but now you're making me think I'm not remembering it correctly. I know this is how I've made them for quite a while...

I'll try using less next time I make them and let you know how they turn out.

Can I use a mushy pear instead of banana? I'm going to try it that way....
I think the banana acts as a leavening (like egg), I'm not sure if it would come out perfect, but they might be good

Yummy!!! I try not to buy waffles because I OD on them.

Do you think you could replace some of that oil with applesauce? I find when I bake cakes and I replace oil with applesauce it gives it a different texture.
It looks like a easy to cook recipe and a very good it in taste from the picture. I will try it today and I hope it will taste good. And tell me some more recipes like this one.

Ok so I dont know if texture really matters but could I make pancakes out of this batter? I dont have a waffle iron but this still sounds delish!

This looks good, but I think I'm going to cut back on the amount of oil. Thanks for sharing this. (Particularly the calorie count!) :)

I make a similar recipe, and for a batch this size I would use 1/4 cup oil and applesauce to replace the 1/4 cup oil deleted. I love waffles!

Yeah, I think that sounds just about right. Must admit I do have a weakness for starchy breakfast foods...though I don't eat them often.
