Vanilla-Carrot Muffins<br><br>
Category: Snacks<br><br><br><br>
Suitable for a: vegan diet<br><br><br><br><br><br>
Ingredients:<br><br>
------------------------------------------------------<br><br><br><br>
1 cup whole wheat flour<br><br>
1 cup white flour<br><br>
4 tsp baking powder<br><br>
1/2 tsp salt<br><br>
1/4 cup brown sugar<br><br>
1 cup plain soymilk<br><br>
1/2 cup unsweetened applesauce<br><br>
1/4 cup canola oil<br><br>
1 tbsp vanilla extract<br><br>
2 cups finely grated fresh carrots<br><br><br><br><br><br>
Instructions:<br><br>
------------------------------------------------------<br><br><br><br>
Mix the dry ingredients and sugar. Stir in the wet ingredients just until everything's moist. Add the carrots and pour into muffin cups lined with paper liners. Bake at 375 degrees for 20-30ish minutes or until risen and firm.<br><br><br><br><br><br>

These sound so yummy!! <img alt="" class="inlineimg" src="/images/smilies/grin.gif" style="border:0px solid;" title=":D"> Would vegetable oil be an ok substitute for canola oil?...as I've looked for canola oil everywhere and I'm pretty sure we can't get it in the UK <img alt="" class="inlineimg" src="/images/smilies/sad.gif" style="border:0px solid;" title=":(">

I usually just use olive oil in place of whatever oil recipes require. The only thing that died because of this was my first attempt at bread...I still can't cook bread even with the "right" oil though lol.

amethyst, sure veg oil would work just fine. Olive oil leaves too much of an altered taste, I think.

I canola oil is the same as rapeseed oil-it's from crushed rapeseeds, maybe that's what it's called in the U.K.?<br>
Any neutral veg oil would be fine, even coconut-I can't see anything as heavy and flavored as olive working though.<br><br>
Any suggestions for adding crushed pineapple? I always liked pineapple in carrot cake.<br>
Thoughts on subbing the amount of soymilk for the added liquid?

Hmm, looks like I'll finally have to open that canola oil. <img alt="" class="inlineimg" src="/images/smilies/tongue3.gif" style="border:0px solid;" title=":p">
