To stuff my green or yellow bell peppers (or both), I have herbed stuffing, portabellas and onion and garlic I can dice, and herbs to add. I also have great northern beans that I am soaking. Should I mix in the white beans with the pepper's stuffing, or serve them on the side??? Seems like adding the beans will make it too bread-y. Opinions please!! <img alt="" class="inlineimg" src="/images/smilies/wink3.gif" style="border:0px solid;" title=";)">

I, personally, would use the beans as a side dish. But, since I love beans, I think it would be good either way. What time should I be over? <img alt="" class="inlineimg" src="/images/smilies/tongue3.gif" style="border:0px solid;" title=":p"><br><br>

This is what I was thinking, beans on the side and leftover Collard greens.

That sounds yummy. <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)"> Those white beans are so delicate in flavor, I think on the side is the way to go,too. I love them mashed with garlic, rosemary, and olive oil.<br><br>

I love rice, so I would forego the stuffing and use brown rice with the beans and all of the other stuff! <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)"><br><br>
Now I want stuffed peppers! <img alt="" class="inlineimg" src="/images/smilies/tongue3.gif" style="border:0px solid;" title=":p">

So funny, I decided to use rice! Beans are in crock pot now. Gonna add lots of mushrooms, chopped onion, and some bread crumbs together with beans and rice to stuff peppers. Ill let u know how it comes out!

OMG peppers were so good...I put white beans in the crockpot and seasoned with onion, tomato, garlic, red pepper flakes, a bit of sea salt, and vegetable bouillion and water. Cooked on high for 5 hours. Then mixed 2 cups beans with 1.5 cups white rice, 8 oz baby portabellas, 2 tbls olive oil and 2 tbls Italian seasoned bread crumbs, and some black pepper. Oh, and 1/4 cup bean cooking juice. Stuffed 4 green bell peppers and 2 yellow. Topped with a drizzle of bean cooking juice and a sprinkle of bread crumbs.<br>
Served with roasted yellow squash, zucchini, yellow onion and grape tomatoes. Gonna be great for lunch tomorrow too! <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)">

I might just buy myself some peppers at the veg market on sunday. I haven't had stuffed peppers in so long!

I would have stuffed the beans in there. <img alt="" class="inlineimg" src="/images/smilies/grin.gif" style="border:0px solid;" title=":D"><br><br>
Then again, I don't tend to follow any real recipes. I just stuff the peppers with crushed tomatoes, black beans, brown rice, and whatever veggies and spices I happen to feel like eating. Sometimes, the combinations come out great and sometimes they don't. (Sure are yummy when they turn out good though!)
