I like the idea of hummus and crackers with a salad that you've added black beans to.

Other ideas for day trip food:

* Quinoa with black beans, red onion or scallions and corn

* crunchy salad with salsa

* fruit salad with nuts added in at the last

* Hummus with celery (just about any veggie is good, but I like celery the best )

* Falafel fixings that you can put together when you arrive (pita breads, falafels, tahini sauce, julienne carrots and cucumbers, lettuce, tomato).

* Veggie Hoagie! lettuce, tomatoes, onions, jicama, chayote with veggie mayo/mustard on a fat hogie roll. I found a recipe once for a veggie sandwich that's to be pressed, but I can't seem to find that recipe again (iirc, they used either olive tapinade for the mayo or a very tangy vinaigarette).

If it's a short day trip, I'll just get some Blue Diamond almonds in the Natrual flavour (the ones with the solid green lable) or I'll get a bag of undyed pastachios. Sometimes I get both (cause ya gotta come back to home sometime <img alt="" class="inlineimg" src="/images/smilies/grin.gif" style="border:0px solid;" title="

Hope that helps a bit. <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title="
