I just ate this for lunch and it was pretty tasty so I thought I'd share.

This morning, I heated a fry pan over medium heat and pressed the liquid from one block of tofu (regular tofu from a chinese market). Then, I crumbled the tofu into the pan and sprinkled it with vegetarian worcestershire sauce, lots of chili powder and salt and pepper. I stir fried it until it was fairly dry. (It was a non-stick pan so I didn't use oil; use oil if you prefer.)

I put this in a plastic container with homemade salsa (I'll give you that recipe, too -- alternatively you could use bottled) and cheese (if you're vegan, use vegan cheese or leave it out) and brought it to work along with 2 soft tacos. Then, at lunch I just put the filling in a soft taco and nuked it.

It was awesome.


2 tomatoes, diced

1/2 onion, minced

handful cilantro, no stems, chopped

2 thai chiles, minced (use gloves)

juice of half lime

salt to taste

Put the tomatoes in a sieve and press them gently to remove some of the juice. Mix all the ingredients, cover and refrigerate for a couple of hours to let the flavours mingle. This is also good with the addition of a ripe avocado, diced.
