I need some nice ideas for toasted sandwiches..<br><br>
I can only think of tomato/feta and mushroom or spinach / mushroom with tomato chilly sauce.<br><br>
Anyone who can give me something else?<img alt="" class="inlineimg" src="/images/smilies/cool3.gif" style="border:0px solid;" title=":cool:">

i like bell peppers, spinach, mushrooms, and avocados.

Tomato and mushroom on toasted ciabatta, roasted peppers & courgette with hummus, red onion & mushrooms with guacamole.<br><br>
And not everyone likes this, but I love toasted banana sandwiches.

you can do apple slices and peanut butter... or banana and peanut butter. thin sliced fennel that's been sauteed with peppers, mushrooms and onions is good too, especially topped with some hummus.

Be careful with feta, I'm pretty sure most have rennet.<br><br>
tomato, mozarella, basil on ciabatta bread brushed with oilve oil. so good in panini press or foreman grill.<br><br>
grilled portabello mushroom,mayo (i use veganaise), kumato tomatoes, avocado - again on ciabatta. (i find it works best for toasted/pressed sandwiches).<br><br>
tomato, avocado, red onion, tofutti (sometimes I even throw in a boca chicken patty) - toast the bread first on this one. <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)"><br><br><br>
Boca spicy chicken, veganaise (or ranch dressing if you're down with dairy), hot sauce, red onion, pickles on roll - my version of buffalo chicken sandwich.<br><br>
(ok some of these aren't just veggie, but i love me some samitches!)

I like grill Onions and Bell Peppers and saute up some mushrooms.<br><br>
Then butter up some Sour Dough and put some high quality meltable cheese between them pieces then put in some Onions, peppers and mushrooms. Then Grill on Both sides till it looks good. ITS AMAZING.<br><br>
The other one I like to do...<br>
Is grill some Tomatoes, Bell Peppers, Onions, Put some Mushrooms in tinfoil and grill some zucchini.<br>
Grill some Pita bread on both sides just to get warm. Then put some stone ground mustard on the bread and fill with veggies. I usually dont put cheese on these but I am sure you could.<br><br>
I use the grill alot... but I am sure you can use a toaster.<br><br>
I need to try some ciabatta.....

I live on green pepper and onions... mmmm. If you sautee the veggies, and then make a grilled cheese (your choices on cheese) it is amazing. =)<br><br>
I also enjoy "Patty Melts", minus the patty. Substitue your favorite soymeat/boca/whatever, with the onions and melted cheese.

ciabatta bread is awesome. if you like garlic, look for a roasted garlic one - omg, you can smell the garlic through two layers of plastic. that one's my favorite, for EVERYTHING. I'd eat it nonstop if I could. <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)">

Ohh marinated grilled portobello mushroom <img alt="" class="inlineimg" src="/images/smilies/drool.gif" style="border:0px solid;" title=":drool:"><br>
I made a sandwich the other day- Tofurky, pepperoncini, olives, mustard, on toasted ciabatta bread. Kinda random, kinda delish!<br><br>

Cheddar & veggie chilli, or cheddar and veggie haggis (may be hard to find, but is awesome). Houmous, falafel & red pepper is lovely too.

hummus or guacamole as bases + veggies such as peppers, tomatoes, salad, chickpeas, olive oil and seasoning.<br><br>

I often have open face bruschetta for lunch, which is chopped tomatoes and torn basil leaves on toasted bread which has olive oil on it and a light sprinkling of salt. You can also add chopped onions too. I just put it all on the toast but it can also be toasted too...

i love toasting rye rolls in my George Foreman Griller and then put red pepper hummus, avo, feta, spinash and tomato.... The more veggies on the sarmie the better.

caramelized onions, spicy eggplant (the jarred kind), mushrooms and red pepper. also some mayo, or guacomole
