Ok, nitrates are bad, right? e.g. I know sodium nitrate causes cancer, because it breaks down into nitrosomes in your gut. I also know they add stuff to meat to prevent that, like asorbic acid (not that I wanna eat sodium nitrate anyway). So what about thiamine mononitrate? Does it break down into nitrosomes? Is it a carcinogen? It's in all sorts of of baked goods (notably my favorite pancake mix). I haven't found anything on it except that it's a common way to add vitamine b12 (and it's in lots of supplements too). Anyone know anything?
