As a vegetarian teen in a meat eating family, it really helps if you can cook your own food some of the time. At the very least, make sure you are responsible for your own school lunches, snacks etc. and be sure to encourage your family to try "your" food anytime. For example, my siblings (and several non-veggie friends) are now totally hooked on soy milk as I forever have it around for smoothie making.
With my family, dinner is the meal we eat together. Often times, my mom can set aside some of what she's cooking before adding meat (for example; rice, lasagna noodles, pasta, stir fry dishes, etc.) and then I can add whatever vegetables or whatever I would like.
Also having salad or sandwich fixings is easy enough and always great in a pinch
