So, a new School year is upon us. Time to fill up our lunch sacks, what do y'all have planned?

i packed a taco casserole thing for work today, left over tacos turned into casserole by baking shells crushing them then added beans/"taco meat" vegan cheese the veggies, repeat layers.

This week, I've been taking potato, cheese and green onion hand pies along with some HP sauce to dip them in. The recipe's from How to Be a Domestic Goddess. (I'm not a student, but I try to pack lunches.)

Teachers went back to school today in Louisiana and kids start Monday. Yikes!

My son started back on Aug 1st where I am. "Year-round" calendar they started last year. He has more off time during the year, though and still gets out at end of May.<br><br><br><br>
I'm going to order for him the laptop lunchbox within the next couple of weeks. I might get one for myself (or DH) to use.<br><br><br><br>
As for lunch... I packed him a cashew butter and agave syrup sandwich today on honey whole wheat bread. Pear sauce. Pretzels and pita chips for snack. A GF SF NF vegan chocolate chip cookie - homemade of course (and d*mn good even if I do say so myself LOL).<br><br><br><br>
Then, he had a large hard plastic water jug that has an interior (removeable) core that I freeze to keep his water cold. In that jug, I put the filtered water and a squirt of Lemon flavored stevia (mmmm those flavored stevias are GOOD).

The lunch bag I use is a small cloth book bag I won in the 4th grade for reading the most books in the MS Read-a-thon. It has the Mystery Sleuth on it--that dog dressed up like Sherlock Holmes. I don't even know if they still do those anymore but it was a big deal in the 70's. I saw the bag on the demo day where they show you what prizes could be won and I thought "I want one of those" so i read 100 books and my grandmother sponsored me $1 a book which in the 1970s was a hell of a lot of money so i was the top reader in my school and won the grand prize--the certificate, the t-shirt and the book bag and got to go up on the stage in front of my school. I was such a geek. ha ha<br><br><br><br>
But it is perfect for holding some fruit and either a sandwich or some leftovers.

I wish i could have an awsome bag like that... or even a read compition... i would rock out... i was the geekiest kid of all, still am :nerd: :p Proud of it too.

My kids started school yesterday. The laptop lunchbox I ordered doesnt come until next Wed so we've been using paperbags. Yesterdays lunch was veggie flautas, dried veggies, grapes, carrots, apple sauce and a few ginger cookies plus a capri sun that she bummed off a friend because I forgot to pack a drink. Today I packed noodles with earth balance, sliced cucumbers, a banana, some ginger cookies and water. Future planned lunches are pumpkin muffins, fondue, pot stickers, baked beans, baked potato, miso soup, veggie eggrolls, english muffin with tofutti cream cheese and dried veggies, veggie corn dog and pb&j. She'll get lots of peas, carrots, cucumbers and salad because those are the only vegetables I can get her to eat plus some sort of fruit everday.

Right now, some of my neighbors get some of my leftovers and other "spoils" (so to speak). <img alt="" class="inlineimg" src="/images/smilies/tongue3.gif" style="border:0px solid;" title=":p"> The other day, I had some vegan spanish rice that I called a couple of neighbors to hand off and the first one to call me back got it. The next one bummed. (giggle)<br><br><br><br>
Then (same day), I had tons of corn bread in the freezer which I handed off to same neighbor b/c I couldn't remember which bag was made with regular wheat flour and which one I used the GF flour (whoops, forgot to label it - my bad). She called me back saying I had just furnished her a yummy dinner for her and the family of 6. I love doing stuff like that. More lunch stuff... for DH, he had a packed lunch of leftover "unstuffed shells" that I made specifically for him since I can't have the soy right now. It's a super yummy recipe that I've had to tie my hands round my back to keep it out of my mouth.<br><br><br><br>
If I were heading out for lunch with a friend (not at a restaurant but the packed lunch type of get together), I'd be packing some of my tahini-free [not a fan of tahini] hummus - mucho yummy. Plus, some cold channa masala. I took a recipe that someone had posted a link to it a while back and I carved up the recipe a bit to make it "my own". It would go over some organic wild rice (by Lundberg which if you forget to rinse it before cooking comes out kinda pink but is VERY yummy). Some frozen blueberries picked locally and kept cold to retain form and taste.<br><br><br><br>
and who knows, prolly one of my son's vegan CC cookies <img alt="" class="inlineimg" src="/images/smilies/sneaky.gif" style="border:0px solid;" title=":shifty:"><br><br><br><br>
... or if I was close enough to a certain HFS, I'd drop by to get some chocolate covered cranberries. <img alt="" class="inlineimg" src="/images/smilies/drool.gif" style="border:0px solid;" title=":drool:"><br><br><br><br>
Actually, I was supposed to meeting my friend today but other things jumped up for her, so we can't. Bummer. <img alt="" class="inlineimg" src="/images/smilies/sad.gif" style="border:0px solid;" title=":("> I've had a stressful week and needed to get out. [My son's school is acting childish - pardon the pun - with regards to his allergies. argh. <img alt="" class="inlineimg" src="/images/smilies/veryangry.gif" style="border:0px solid;" title=":grr:"> ] But I digress...
