I just press mine after thawing (or not, depending on what I'm doing) and I thaw it by either setting them out on the counter for a few minutes, or thawing them in the nuke on the lowest setting for about 30-40 seconds.<br><br><br><br>
If you're talking about getting rid of the water <i>before</i> freezing, just press the water out or drain it out. You can press it by wrapping the tofu in towles (either paper towles or non-fuzzy dish towles), "sandwiching" the tofu between 2 plates and placing a heavy item on the top plate for a weight. After its pressed as dry as you'd like, then slice the tofu and freeze.

I don't really worry about pressing the water out until after I thaw it. Extra firm tofu is the easiest. I just wash my hands and squeeze until I can get most of it out without crumbling the tofu.
