Suitable for a: vegan diet<br><br><br><br><br><br>
Ingredients:<br><br>
------------------------------------------------------<br><br><br><ul><li>1 cup cracked wheat*<br></li>
<li>¼ cup olive oil<br></li>
<li>¼ cup lemon juice<br></li>
<li>¼ teaspoon salt<br></li>
<li>1 cup scallions<br></li>
<li>1 cucumber<br></li>
<li>2 medium tomatoes<br></li>
</ul><br><br><br><br><br>
Instructions:<br><br>
------------------------------------------------------<br><br><br><br>
Bring 1 cup of water to a boil. Add cracked wheat and salt. Turn off heat. Cover and let sit for 20 minutes. Dice veggies. After 20 minutes add olive oil, lemon juice, and diced veggies. Mix well. Refrigerate.<br><br><br><br><br><br>
Additional comments:<br><br>

Optional: Add ½ cup garbanzo beans (chickpeas).<br><br><br><br>
You can eat this plain (as a side) or spread the inside of a pita with hummus and stuff it with the tabouli.
