I don't think I've seen a vegan version fo this before so I made a recipe tonight and it turned out well.

2 sweet potatos

1/2 cup soy milk

1/4 cup soy flour

1/3 cup margarine

1/3 cup turbinado sugar

1/2 tsp cinamon

1/2 tsp nutmeg

Boil the potatos for 45 minuts or so. Then peel off the skin and mash them up. Mix all the ingredients together well. Pour into a pie shell and bake at 350 for an hour.

If it's 2:00 am and you are too lazy to make a traditional pie crust try this.

1/2 cup vegetable oil

1 T margarine

1/2 cup boiling water

2 cups flour

1 tsp baking powder

pinch salt

mix the dry ingredinets together. Add the boiling water to the shortening. Then mis the two and knead for a minute. Chill the dough for a little while and then press into a pie pan.

BTW, sweet potatos are one of the heathiest vegetables so you can pretend you are eating health food while you eat this pie

last year i made a vegan apple pie and i wasn't too terribly thrilled with it, so i wanted to go a different route this year.


i searched for some recipes and ultimately chose one that was posted on this website
