Prep: 5 min. Cook: 5 hours

4 cups Vegetable broth
3 cups Sweet potatoes, peeled and cubed
1-1/2 cups Dried lentils, rinsed
3 medium carrots, cut into chunks
1 medium onion, chopped
4 garlic cloves, minced
1/2 teaspoon Ground cumin
1/4 teaspoon Ground ginger
1/4 teaspoon Cayenne pepper
1/4 cup Minced fresh cilantro
1/4 teaspoon Salt

In a 3 quart slow cooker, combine the first nine ingredients. Cover and cook on low for 5-6 hours or until the veggies are tender. Stir in the minced cilantro and salt and your done.
