Prep: 5 min. Cook: 5 hours<br><br>
4 cups Vegetable broth<br>
3 cups Sweet potatoes, peeled and cubed<br>
1-1/2 cups Dried lentils, rinsed<br>
3 medium carrots, cut into chunks<br>
1 medium onion, chopped<br>
4 garlic cloves, minced<br>
1/2 teaspoon Ground cumin<br>
1/4 teaspoon Ground ginger<br>
1/4 teaspoon Cayenne pepper<br>
1/4 cup Minced fresh cilantro<br>
1/4 teaspoon Salt<br><br><br>
In a 3 quart slow cooker, combine the <span style="text-decoration:underline;">first nine</span> ingredients. Cover and cook on low for 5-6 hours or until the veggies are tender. Yumm! This sounds great; it incorporates 2 of my all-time faves, sweet potatoes and lentils! I will be making it soon. <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)">
