Superfoods: New Study Lists–and Ranks–World’s Healthiest Fruits and Vegetables

A study of superfoods (vegetarian) rated.

Now the question is, does anyone have any recipes that these particular foods would taste good in? My gf is vegetarian and we are having problems finding a third item to fill a dinner plate constantly.

A whole grain and a legume would help. Those superfoods on your list are very low in calories. :) And welcome, btw!!

Forget about 'superfoods' and just aim for eating a variety of relatively unprocessed plants.
The healthiest vegetables are the ones you'll eat. Focusing on a few food items abnormally rich in a very small selection of nutrients, while ignoring other healthy foods isnt a particularly well balanced idea.
Take a look at your local market to see whats available, then look at any veg*n cook book/blog that has recipes that arent swimming in fat and sugar. Once you get used to cooking you will only rarely need recipes- soups, stews, stir fries, casseroles, wraps, rice and _______, etc. can just be invented on the spot once your accustomed to thinking in such a way. It has a bonus of saving money by letting you avoid out of season or obscure items that recipes might insist on.

Point yourself at plants and follow your tongue.

and as for the meals, we have pasta down pat, and a vegetable to add, such as beans/steamed carrots/broccoli, or a salad, but whereas I would have put chicken or beef or something as a third, we don't know what to put. Her mother usually made a tofu dish for her, so we are working towards that.

Alternatively, we are considering one-dish options, such as tacos, asian soup, sushi, but we would like to be able to make vegatarian meals with 3 dishes that please both the vegetarian and the usual-meat eater.

One thing you might do is to take a look at the Searchable Online
Archive of Recipes (S.O.A.R.).

Use the Advanced Search feature to Google the text.

Search for an ingredient on your list, say, watercress. You will find 168 recipes.
Cull out the ones that are not vegetarian. You'll probably have 40 or so recipes left.
