<b>For this recipe, you can use canned tomatoes, but trust me, it's SO much better with fresh ones....<br><br><br><br></b>

INGREDIENTS:<br><br><br><br>
2 tbsp olive oil<br><br>
2 cloves garlic<br><br>
Salt & Pepper (to taste)<br><br>
Approx 6 medium tomatoes, diced -OR- 1 large can of diced tomatoes<br><br>
1/4 cup (packed) fresh basil, chopped fine<br><br>
1 cup (packed) fresh baby spinach, chopped fine<br><br>
1/4 cup vodka<br><br><br><br>
Optional: Add cream or cottage cheese to sauce for protein and creamy richness.<br><br><br><br></b>

Sautee garlic in olive oil (and salt & pepper, if desired) until tender.<br><br>
***Be careful not to overcook, as garlic's flavor will be compromised by overcooking!***<br><br><br><br>
Add basil, spinach, tomatoes and vodka and simmer uncovered for about 20 mins. If desired, add cream or cottage cheese at this time, heat through and remove from heat.<br><br><br><br>
Once sauce is done, toss with penne pasta or top spaghetti-type noodles.<br><br><br><br>

You should have put in a warning about pulling the pan off the heat <b>before</b> adding in the vodka b/c vodka is flammable.<br><br><br><br>
Otherwise, great recipe. <img alt="" class="inlineimg" src="/images/smilies/thumbsup.gif" style="border:0px solid;" title=":up:"><br><br><br><br>
Can you use blended silken tofu instead of the cream/cottage cheese?

I figured this was common sense, but I forget that sometimes (not always) people don't think about stuff like this!<br><br><br><br>

BTW: 4ever, I haven't tried it with the tofu (I'm ovo-lacto who is a dairy-holic), but I assume it would be fine. Give 'er a try and let us know! I made this sans vodka and it was absolutely delicious! I kept "tasting" it so much that by the time the pasta was ready there was barely enough to cover it all! Excellent recipe that will be made again.
