We happened upon some fresh coconut recently. IS cracked it open today, and ate a bit with dinner, but now we have a LOT of coconut left over. Does anyone have tips on how best to store it, how long it will keep in the fridge, and if we can freeze any?

Also, this is more of a companion animals type question, but do you think we could put any of it out for the birds/squirrels? (I don't want to poison any crittters)

Squirresl LOVE the stuff. I have no idea, but I don't think it's toxic to any animals.

Grate it - or food process it - and freeze it in baggies - it freezes for a LONG time. I've used baggies of it that have been in my freezer for over a year and they taste nice and fresh still.

Thanks. I tried Googling "freezing coconut", but didn't get a clear answer. Personally, I think coconut is
, but that other guy kinda digs it.
