I am looking for St. Patrick's day suggestions. Are there any Irish vegans who can share what they use to replace the corned-cow-flesh? I am technically lacto-ovo myself, but I am eating all vegan for Lent, and I do like cooking vegan foods a lot, so I thought I would ask in here. I really like seitan, also, and would like to make something with that.

Yea, there is an Irish stew that I am thinking of trying, but I am hoping for a not stew or soup type of thing. I regular entree type thing i guess.

I'm interested in this topic as well. For months now I have been thinking about how to make corned beef & cabbage, obviously without the cow. Someone must have some idea?
