Spring Roll Pie<br><br>
Category: Main Dishes - Other<br><br><br><br>
Suitable for a: vegan diet<br><br><br><br><br><br>
Ingredients:<br><br>

1 recipe double pie crust<br><br>
4 C cabbage, shredded<br><br>
2 carrots, shredded<br><br>
1 bell pepper, minced<br><br>
1 lg onion, minced<br><br>
3 cloves garlic, minced<br><br>
3 tsp fresh grated ginger<br><br>
1 tbsp cornstarch<br><br>
2 tbsp soy sauce<br><br>
1 1/2 tsp molasses<br><br><br><br><br><br>
Instructions:<br><br>

Roll out pie crusts to 1/4" thickness. Lightly grease a small casserole pan and lay one crust in the pan. Place the other crust to the side. Preheat oven to 350 degrees.<br><br>
Place cabbage, carrots, pepper, onion, garlic and ginger in large bowl and stir to mix. Heat 2-3 tbsp oil in large saute pan or wok. Add cabbage mixture in batches and heat just until tender. Return mixture to bowl.<br><br>
Mix cornstarch, soy sauce and molasses in small bowl. Whisk until smooth then add to cabbage mixture. Stir until well coated. Spoon mixture over pie crust in casserole dish then place other pie crust on top. Vent in the middle with a small cut. Place in oven and cook 30-35 minutes or until lightly browned.<br><br><br><br><br><br>

This filled a small casserole dish and I served it with fried rice. It fed 7 people (4 adults, 3 kids) with the fried rice so it does make a fair amount. I sprinkled about 3 tbsp of Braggs over the top after it came out too. It came about after I realized the pie crusts don't fry well so egg rolls were of the menu. lol

Spring Roll Pie!! That is SUCH a good idea- I've been craving spring rolls for weeks, but the ready made ones in my area all have milk, and I'm too lazy to make my own!

I use a food processor. You can even throw the onion and pepper in it if you want. I usually hand chop the pepper. I press the garlic in a garlic press and I hand grate the ginger. I'm sure if you don't mind the work, you can hand grate all of them, I'm just lazy.<br><br>
I used a crust recipe out of one of my vegan cookbooks. Since it's not my recipe, I won't post it but if you PM me, I'll give it to you. <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)"><br><br>
