Spinach Polenta Dish

I tried my hand making a dish using precooked polenta. Check out the recipe on my blog. I even added pictures! My two year veggie anniversary is quickly approaching!!

Has anyone ever cooked with polenta before? Any different cooking methods I should try?

I use the slices for tiny pizza crusts.
